The Big 20/20 Event: Day 19: Make Your Own Bison Meatloaf

This post is brought to you by the lovely Jamie.

Recently, I’ve gotten into organic eating and have begun fixing different meals at home. I’m not an expert chef by any means, but I am trying. :) This may not be the most original of meals, but I tried to put my own twist on an old favorite.

Easy Banana Bread Recipe Card Printable

When your see brown bananas...2014-01-21 14.07.14

That's a great time to make banana bread! I love brown bananas, they are so sweet! Other than making banana bread, I also like freezing them for smoothies! The picture above was actually taken after I made the banana bread. Which is too bad, because there was a siamese-twin banana! It was two bananas whose peel was connected together.

Anywho, my mother-in-law let me use her recipe card. She has had the recipe card  for a long time, it's gotten quite the personality!

As you can see, this recipe is so easy! I have been learning how to use Illustrator so I thought I would try and make a printable recipe card for you.

I used a bamboo skewer to check if the banana bread was done. Make sure it comes out totally clean. The first time I poked the bread, some crumbs clinging on it. So I baked it 10-15 minutes longer. I baked it for 70-75 minutes total.

The bread was so good! We finished it in one day :) How could I have resisted?

Japanese Cream Puff

I remember the first time I had Japanese Cream Puff. One day in Indonesia my family and I went to go bowling at the mall. We played a few games. When my parents got tired, they stopped so I just played with my brother while my parents walked around the mall and decided to buy us some treat. They came back with a box with a picture of an old man on it. It said 'Beard Papa'. I opened it and there were cream puffs. I took my first bite and was just in delight. It was not like any cream puffs I had ever had! The cream puff were crispy outside with very delicious, cold, vanilla custard in it.

Now that I live in WA, there isn't Beard Papa here. Sadness... I just found out that they have stores in USA (2 of them in WA.) That makes me so happy! I suggest you try their cream puff. Find the locations here

And then Pinterest came! So I searched for a Japanese Cream Puff recipe and came across this recipe. The only thing I did different was I used 2 tsp of vanilla extract instead of vanilla bean. I would love to make this again using vanilla bean instead of vanilla extract, I bet it's a ton more delicious!
The picture looks amazing and really reminds me of the cream puff I'd been craving. I was excited to try the recipe!

I made it and it looks and tastes amazing!

Recipe from Simple Indulgence

Tater Tots Casserole

Growing up, I have always loved Tater Tots. It's just sooo good. You can bake Tater Tots in the oven instead of frying it, it becomes crispy and just delicious!

Anywho, this is another recipe that I found through Pinterest. Pinterest is so addicting, I like to look for recipes there.

Mr. Bee and I (especially I) really loved this stuff. It was so easy to make, too! Umm.. maybe I will make it for dinner sometime next week. I forgot to take the pictures of each step, but it's pretty straight forward.

Tater Tots Casserole (This recipe is retrieved from Craving Comfort)
2013-05-26 17.29.32

  • 1 lb lean ground beef

  • 1/2 medium onion, chopped

  • 1 (10 1/2 ounce) can cream of chicken soup (I think you can use other cream if you'd like)

  • 1 16oz package frozen tater tots

  • 1 cup shredded cheddar cheese

  • salt & pepper

Preheat oven to 375 degrees.

Brown ground beef and season with salt & pepper.

Add chopped onion, cook until tender.

In a casserole dish, combine ground beef mixture & cream soup and cover with tater tots.

Bake , uncovered, for 30-40 minutes till bubbly and Tots are golden brown. Remove from oven & top with cheese, return to oven until melted.

Eat and enjoy with someone special (or just by yourself)

Bacon, Egg, and Toast Cups for Breakfast!

So I came across this on pinterest. It's bacon, egg and toast in a cup! I like bacon, I like egg, and I like toast, so having it in a cup is just super cute!

I tried making it for Mr. Bee, he loved it!

Bacon, Egg, and Toast Cups (recipe adapted from Martha Stewart)

  • 2 tablespoons unsalted butter, melted

  • 6 slices white or whole-wheat sandwich bread

  • 6 slices bacon

  • 6 large eggs

  • Coarse salt and ground pepper, to taste

Preheat oven to 375 degrees. Spread butter lightly on muffin cups. You just want to spread enough so that the bread won't stick.

Flatten the bread, I used my fingers but you can use a rolling pin if you want. You want to flatten it so that everything will fit in the muffin cup! After you flatten the bread, cut the bread crust, and slice it into half to have smaller, square-ish bread pieces. In Martha Stewart, they used a cookie cutter to cut the bread into a circular shape, and then they cut it in halves. In the end, it looks prettier, so you can do that if you'd like. I was too lazy so I didn't do that.2013-05-26 10.02.24

Fit the bread into the muffin cup. Each cup uses 2 halves. It will overlap a little in the middle. Make sure to have no gap on the bottom to prevent the egg from 'leaking' out of the bread cups.

Spread the rest of the butter on the bread. This will make the bread crispy when baked in the oven.

Lay bacon in across the cup. The bacon needs to be cooked for a little bit, but don't worry about getting it to be really crispy. It will cook more in the oven.

Crack an egg in each cup. Sprinkle pepper and salt!
2013-05-26 10.20.42

Bake for 20-25 minutes. I baked it for 25 minutes because I like my yolk not too soft.

Yay done! Mr. Bee and I ate 3 each (I know, way too much for a person haha).

Anywho, if you would like to try it, I recommend going to the recipe at Martha Stewart as they have a video there! The video explained it really well, so it should help :)
